  • 500g mascarpone cheese
  • 4 fresh eggs, separated
  • 150g granulated sugar
  • 1 cup strong brewed coffee, cooled
  • 1 tbsp coffee liqueur (optional)
  • 2 tbsp unsweetened cocoa powder
  • 1 tsp vanilla extract

Instructions

  • In a mixing bowl, whisk the egg yolks and sugar until the mixture is light and fluffy.
  • Add the mascarpone cheese and vanilla extract, stirring until smooth and creamy.
  • In a separate bowl, beat the egg whites until soft peaks form, then gently fold them into the mascarpone mixture to create a light, airy texture.
  • Quickly dip each ladyfinger into the brewed coffee, ensuring they absorb enough liquid without becoming soggy.
  • Arrange a layer of coffee-soaked ladyfingers in a dish, then spread half of the mascarpone mixture on top.
  • Repeat with another layer of ladyfingers, followed by the remaining mascarpone cream.
  • Dust the top with cocoa powder using a fine sieve.
  • Cover and refrigerate for at least 4 hours (overnight is best) before serving.

Notes

  • or a stronger coffee flavor, increase the coffee liqueur to 2 tbsp.
  • Swap mascarpone for a mix of cream cheese and heavy cream if unavailable.
