Description

This scrumptious salmon cream cheese pasta combines tender salmon, a rich, creamy sauce, and perfectly cooked pasta for a delightful family meal that warms your heart.

Ingredients

• 1 lb fresh salmon fillets (skinless)
• 8 oz cream cheese, softened
• 12 oz pasta (penne, fusilli, or spaghetti)
• 2 cups fresh spinach
• 1 cup cherry tomatoes, halved
• 2 cloves garlic, minced
• 1 tbsp olive oil
• Juice of 1 lemon
• Salt and pepper to taste
• 2 tbsp fresh dill, chopped

Instructions

  • Season the salmon with salt, pepper, lemon juice, and a drizzle of olive oil. Sear in a non-stick pan for 4-5 minutes per side until flaky. Allow to cool and flake into pieces.
  • In a large skillet, sauté minced garlic in olive oil until fragrant. Add the spinach and cherry tomatoes; cook until the vegetables soften.
  • Lower the heat and stir in the cream cheese, mixing until it melts into a smooth, creamy sauce for your salmon cream cheese pasta.
  • Add the fresh dill, salt, and pepper to enhance the flavors.
  • Cook the pasta in salted water until al dente. Drain the pasta, reserving 1 cup of pasta water.
  • Combine the flaked salmon with the creamy sauce, then gradually mix in the pasta. Adjust the sauce consistency with the reserved pasta water if needed.
  • Serve immediately and enjoy your delicious salmon cream cheese pasta.

Notes

For extra creaminess, stir in a splash of heavy cream at the end.
• You may swap spinach for kale or arugula for a fresh twist.
• Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat gently on the stovetop.
