Ingredients
• 1 lb fresh salmon fillets (skinless)
• 8 oz cream cheese, softened
• 12 oz pasta (penne, fusilli, or spaghetti)
• 2 cups fresh spinach
• 1 cup cherry tomatoes, halved
• 2 cloves garlic, minced
• 1 tbsp olive oil
• Juice of 1 lemon
• Salt and pepper to taste
• 2 tbsp fresh dill, chopped
Instructions
- Season the salmon with salt, pepper, lemon juice, and a drizzle of olive oil. Sear in a non-stick pan for 4-5 minutes per side until flaky. Allow to cool and flake into pieces.
