Ingredients
• 1 lb mixed mushrooms (cremini, shiitake, button)
• 3 garlic cloves, minced
• 2 tbsp extra virgin olive oil
• 1 small onion, chopped
• 1 bell pepper, sliced
• 1 tsp fresh thyme (or ½ tsp dried)
• 1 tsp chopped rosemary
• Salt and pepper to taste
• 1 tbsp lemon juice
• ¼ tsp red pepper flakes (optional)
Instructions
- Clean and slice your mushrooms evenly.
- Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté until fragrant (about 1 minute).
- Add the sliced mushrooms and cook until they release their juices and begin to brown.
- Stir in the chopped onion and bell pepper, and cook until tender.
- Sprinkle in the thyme, rosemary, salt, and pepper, then add the lemon juice (and red pepper flakes if using).
- Allow the mushroom medley to simmer for 2-3 minutes, stirring occasionally, so the flavors meld together.
- Serve warm and enjoy this comforting, family-inspired mushroom medley.
Notes
• For an extra twist, add a splash of white wine during step 4 or toss in some spinach at the end.
