Description

These crispy roasted Maris Piper potatoes are golden, crunchy on the outside, and fluffy inside. Perfect for Sunday roasts, holiday feasts, or as a delicious side dish any time!


Ingredients

  • 1 kg Maris Piper potatoes, peeled and cut into chunks
  • 3 tbsp vegetable oil or goose fat
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tsp garlic granules (optional)
  • 1 tsp dried rosemary (or thyme)
  • 1 tbsp semolina (for extra crispiness)

Instructions

  • Preheat the oven to 220°C (425°F). Place a roasting tray with oil or goose fat inside to heat up.
  • Parboil the potatoes in salted water for 10 minutes until slightly tender.
  • Drain well, then shake the pot to roughen the edges—this creates an extra crispy texture.
  • Coat the potatoes with semolina, salt, pepper, and garlic granules.
  • Carefully transfer the potatoes onto the hot tray, ensuring they sizzle on contact.
  • Roast for 40-50 minutes, flipping halfway, until golden and crispy.
  • Sprinkle with rosemary and serve hot!

Notes

  • For extra flavor, add crushed garlic cloves and fresh rosemary in the last 15 minutes.
  • For an air fryer version, cook at 200°C (400°F) for 20-25 minutes, shaking halfway.
  • Store leftovers in an airtight container and reheat in the oven for 10 minutes at 200°C (400°F).
