- 1 kg Maris Piper potatoes, peeled and cut into chunks
- 3 tbsp vegetable oil or goose fat
- 1 tsp sea salt
- ½ tsp black pepper
- 1 tsp garlic granules (optional)
- 1 tsp dried rosemary (or thyme)
- 1 tbsp semolina (for extra crispiness)
Instructions
- Preheat the oven to 220°C (425°F). Place a roasting tray with oil or goose fat inside to heat up.
- Parboil the potatoes in salted water for 10 minutes until slightly tender.
- Drain well, then shake the pot to roughen the edges—this creates an extra crispy texture.
- Coat the potatoes with semolina, salt, pepper, and garlic granules.
- Carefully transfer the potatoes onto the hot tray, ensuring they sizzle on contact.
- Roast for 40-50 minutes, flipping halfway, until golden and crispy.
- Sprinkle with rosemary and serve hot!
Notes
- For extra flavor, add crushed garlic cloves and fresh rosemary in the last 15 minutes.
- For an air fryer version, cook at 200°C (400°F) for 20-25 minutes, shaking halfway.
- Store leftovers in an airtight container and reheat in the oven for 10 minutes at 200°C (400°F).
