• 1 cup black beans, drained and rinsed
• 1 cup kidney beans, drained and rinsed
• 1 cup pinto beans, drained and rinsed
• 1 red bell pepper, diced
• 1 small red onion, finely chopped
• 1 avocado, diced (optional)
• 1/2 cup fresh cilantro, chopped


Instructions

  • In a bowl, whisk together the chipotle peppers, adobo sauce, lime juice, minced garlic, olive oil, cumin, salt, and pepper to create a marinade.
  • Add the chicken to the marinade, ensuring each piece is well coated. Refrigerate and marinate for at least 30 minutes.
  • Preheat your grill to medium-high heat. Grill the chicken for 7-10 minutes per side until cooked through and nicely charred.
