Description

Ingredients

• 4 boneless, skinless chicken breasts
• 12 oz pasta (spaghetti or fettuccine)
• 6–8 garlic cloves, finely chopped
• 1 cup grated Parmesan cheese
• 2 cups marinara sauce (homemade or quality store-bought)
• 1 cup breadcrumbs (or panko for extra crunch)
• 2 eggs, lightly beaten
• Fresh basil and oregano (to taste)
• Salt and pepper (to taste)
• 2–3 tbsp olive oil


Instructions

  • Prepare the Chicken: Season chicken breasts with salt, pepper, and oregano. Dip each in beaten eggs, then coat evenly with a mix of breadcrumbs and Parmesan.
  • Cook the Chicken: Heat olive oil in a skillet over medium heat. Fry each chicken breast for 4–5 minutes per side until golden and crispy. Alternatively, bake at 400°F for 20–25 minutes, turning halfway.
  • Boil the Pasta: In a large pot, boil salted water and cook pasta according to package instructions until al dente. Drain and set aside with a drizzle of olive oil.
  • Make the Garlic Sauce: In the same skillet, sauté the chopped garlic over low heat for 1–2 minutes. Pour in the marinara sauce, add fresh basil, and simmer. Stir in half of the Parmesan until melted.

 

  • Combine and Serve: Toss the pasta in the garlic sauce, then place the crispy chicken on top. Sprinkle with the remaining Parmesan and garnish with fresh basil before serving.

Notes

For extra flavor, marinate the chicken in garlic and herbs for 30 minutes before coating. Experiment with adding a pinch of red pepper flakes for a spicy kick. Store leftovers in an airtight container for up to 3 days or freeze for later use.
