Ingredients
For the Dough:
- 4 cups all-purpose flour
- 1 tablespoon instant yeast
- 2 tablespoons milk powder
- 1 teaspoon salt
- 2 tablespoons sugar
- 1 egg (room temperature)
- ¼ cup butter or oil
- ¾ cup warm milk or water
For the Chicken Filling:
- 2 cups chicken breast or thighs, boiled & shredded
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon oil
- ½ teaspoon salt
- 1 teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon chili flakes (optional)
- ½ cup mozzarella or cheddar cheese, shredded
- 2 tablespoons mayonnaise or cream cheese
- 1 tablespoon chopped fresh coriander or parsley
For Topping:
- 1 egg (for egg wash)
- 1 tablespoon sesame or nigella seeds (optional)
Instructions
Step 1: Prepare the Dough
- In a mixing bowl, whisk together flour, yeast, milk powder, salt, and sugar.
- Add egg, butter, and warm milk (or water) and mix until a dough forms.
- Knead for 8-10 minutes until smooth and elastic.
- Place in a greased bowl, cover, and let it rise for 60-90 minutes, or until doubled in size.
Step 2: Make the Chicken Filling
5. Heat oil in a pan and sauté onions and garlic until soft.
6. Add shredded chicken, salt, black pepper, paprika, and chili flakes. Stir for 2-3 minutes.
7. Remove from heat and mix in cheese, mayonnaise, and fresh coriander. Let it cool.
Step 3: Assemble the Chicken Bread
8. Punch down the dough and roll it into a rectangular shape (¼-inch thick).
9. Place the filling in the center.
10. For a braided effect, cut diagonal slits on both sides and fold over the strips alternately.
11. Seal the edges and transfer to a baking tray lined with parchment paper.
Step 4: Baking the Chicken Bread
12. Brush with egg wash and sprinkle sesame or nigella seeds on top.
13. Let it rest for 15-20 minutes before baking.
14. Bake at 375°F (190°C) for 20-25 minutes, or until golden brown.
Step 5: Serving & Storage
15. Let the bread cool slightly before slicing.
16. Serve warm with garlic mayo, marinara sauce, or green chutney.
17. Store leftovers in an airtight container for 2-3 days or freeze for up to 2 months.

- If the dough is too dry, add a little warm milk, 1 tablespoon at a time.
- For a spicier filling, add chopped jalapeños or extra chili flakes.
