Ingredients
Scale
- 2 ½ cups all-purpose flour
- 1 ¾ cups granulated sugar
- 2 teaspoons baking powder
- ½ teaspoon salt
- 3 large eggs
- 1 cup unsalted butter, softened
- 2 teaspoons vanilla extract
- 1 ½ cups pitted cherries (fresh or frozen)
- 1 cup semisweet chocolate chips
- 1 cup milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and lightly flour a 9-inch cake pan to ensure your cherry chip cake releases easily after baking.
- In a large bowl, sift together the flour, baking powder, and salt for an even texture.
- In another bowl, beat the softened butter with the granulated sugar until light and fluffy. Add the eggs one at a time, then stir in the vanilla extract.
- Gradually alternate adding the dry ingredients and milk into the butter mixture, stirring gently until just combined.
- Carefully fold in the cherries and chocolate chips, ensuring an even distribution throughout the batter.
- Pour the batter into the prepared pan and bake for 35–40 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool completely before serving.
Notes
For best results, toss the cherries in a little extra flour before folding them in to help prevent sinking.
For an extra twist, try adding ½ teaspoon of almond extract or ½ cup of chopped walnuts for added flavor and texture.
Store any leftover cake in an airtight container at room temperature for up to 3 days.
